I think potting flop is just to easy to exploit and doesnt make a lot of sense like you pointed out. I think we should just cbet our entire range for around 1/2pot (given the dryness of board texture), its a simple strategy that from my experience will work very well. Also I'm not sure but when we are thinking about our flop sizing we shouldnt worry too much about stack sizes being awkward on some turn cards (i mean it is a consideration, but not a big one imo). Just cbet half pot and enjoy playing the rest of the hand with slightly deeper stacks in position. Sure, we might get into some troubling spots when the villain x/jams turns but if we perceive chance of it happening to be large we can just checkback turn like you did and play river accordingly.

If his UTG open range is anywhere near "decent" (lets say ess than 25%) => he actually will not hit that turn often at all. However given our reads maybe he does. Also, river 8s is not bad, a Q or a T should be much worse. I would fold river thou, because unless he is turning Jx into a bluff (which he isnt) we don't have enough equity, i would guess.
Also, I might be barreling turn given: SPR+he shouldnt hit that turn all that often+if he picked up flushdraw he will continue and we crush him.

Personally, I would like to see a video about 3bet pots, especially when we call 3bet OOP. It's something I struggle quite a bit (not sure if over-folding to cbets or maybe not folding enough to 3bets, etc). That's only me thou :)
I enjoy the way you explain your tought process, feels very natural and easy to grasp.
About one hand thou:

I feel like we should try to get value on turn (instead of on river) because on hearts and T we will be unable to value bet. Also anytime MrBean called the flop with a hand that contains T or J he might be very tempted to continue calling (not to mention if he has a fd which we dont block).
