After a decade ish long break I noticed the big blind ante structure is used in live MTTs everywhere now. I remember in the late 2000's/early 2010's, open minraising was frowned upon in MTTs. Many players seem to be doing this more often nowadays. How does one's strategy change when these big blind antes are introduced in the first level? Is open minraising still a sound strategy in the first levels of the big blind ante structures? Also vs a minraise is it always a call from the big blind with most hands?

I tried searching for videos on this new structure (for me) that seems to be the norm the last 6ish years but can't find any.

Can someone explain the wine analogy? Does it mean to be able to identify certain player characteristics/patterns/emotions etc., deep in the tournament and capitalizing on their weaknesses?
