In general I 2bet with the higher door always. But that doesnt mean it's the best play. When the players are a little bit weak (can't hand read), then I think flatting can be OK, to try to play a multiway pot (with a hand that wants to be played multiway, so weak 3flushes)
Aside from the obvious trap combinations like rolled up combos, what do you like to add to your flatting range to make him stronger vs a competent lineup? It seems that whenever we opt for a 2bet with higher door cards it leaves our flatting range unprotected and weak.
As i said, in general I 2bet with higher door card always, so i dont have any flatting range which is unprotected and weak. However as i said, when we are playing against weaker players it doesnt matter that much if your flatting range is weak/faceup, because players are weak, and wouldn't exploit it

In general starting hands shouldn't change at all.
With ICM considerations it's completely different, but every hand is unique and I can't give you an exact answer. Bigger stack can open more wide. Middle/Short stack should open/defend tighter.
Later street play are quite automatic in stud to be honest. Therefore I don't think it will be helpful and interesting to make a video that focuses only later street play. I still review a lot of stud hands in my videos from start to finish (including later streets, 5th/6th/river).
