1: Ya I think I d go for it and shove. He s not gong to have that many 8x hands (or he shouldnt anyways, maybe like 4-6 combos), he can have 99-TT, AJ, maybe some combos of KJ and if he s folding all 1 pair hands then this is a great spot to unload with reckless abandon with whatever bluffs you have.

2: I think this is too thin. I usually put villains who overcall on KQ-AQ, 88-JJ, JTs, QJs, some combos of QQ+, sometimes AK. Something along those lines anyways and it obv varies with villain. Most of that range either folded flop or beats you now. I am tempted though to bet because its unlikely you get c/r bluffed and you d assume that most of his better hands to bet themselves however I think it could be still a bit thin as we have to get Jx to make a bad call and hope that he is really betting everything better. Some loose passives get strange ideas about slowplaying in some spots.

I think you can shove both.
On hand 2 it probably look pretty bluffy to him and I think it's a good spot to valuebet thin. I don't think he will fold a jack and I think people tend to fast play sets on this kind of board. (especially when they are in between 2players. Although it's rainbow, any 5, 6, 9, T is pretty bad for him, so I think he will check raise flopped sets. But if we still would give him sets we would have 71% equity against a range of AJ, KJs, QJs, 77, 88, TT)

My concern isnt so much him not calling with a J. Its more him not having enough Jx hands for us to value bet against. Its also not impossible for him to have a T or a 9.

I'd begrudgingly jam hand 1 due to villain's ridiculously high WTSD and probably check back hand 2 for the reasons that W2MK stated.
