As it is NL2 i've had a good succes jamming turn with pocket aces and sets, as many players calls way behind. Getting called by flush draws and top pairs all the time in these spots, and that's the main reason for the jam. But i actually want to know if this is the way to extract most value?

If your opponent is playing 31/21 he doesn't seem completely out of line so I'd rather just bet something like $0.75 and take it from there. Most opponents should easily be able to get away from hands like 87 or heart draws versus your overbet.

Sure, you may find some opponents who will call you here with QJ, but for the most part, you are simply making it too easy for any reasonable player to find folds with all sorts of hands that they would call a 3/4 pot bet with..
All Qx hands, all flush draws, straight draws, pair + straight draws, etc.
Stacks here set up nicely for a decent size bet on the turn, followed by a river jam.
