My Question here: What's the best play here against a fish? Do you ever put him on a better hand or, because he is a fish, you would gamble hoping he has a weak Ace?

As played, I suspect him to have a weaker ace and he is raising as he doesnt want to get re-drawed.

He would have to be a very aggro fish for me to get it in like this here, which, you probably would notice in the 30 hands you have played with him, so I prefer calling flop, as a typical value-range by a fish here have you crushed and you want to keep his bluffs in.
Most fish that aren´t crazy will flatcall the flop with random aces, rather than raise, as they think you are either bluffing or have a better one typically.

Yes, fish don't shove their draws after being raised and don't overplay raise weak hands. They just call too much.

I think you played this too aggressively.

I think he would raise bigger with a weaker hand in that case.

Min raises from fish are usually the nuts
