Ev plays vs different opponents

I have a question, I have run simulations thorugh Variance Calculator, according to your WR you are more or less likely to have a downswing or determine the numbers of hands where you may reach your Expected WR.
But if we play at different hours, vs different players each one with their own long term expectation, how we are supposed to reach our long term winnings if we play against different players each day?
I know that for example in HS where you play against the same players every day you can estimate your long term expectaion according of who is less exploitable and adjust better, but how this works for random pools of players, for example in low and microstakes.
I got coolered, and in the long term Im supposed to stabilize this fact, but how I am going to do it if the one who play with worst equity I maybe wont see him anymore.
This generate me doubts about EV plays, when I dont win I feel like I will never see the robber again, and dont let me to continue putting the volume needed to reach "long term" (120K hands in my case for beaating one stake)
Can anyone explain me how this works?, in resume repeating EV plays vs random players
Thanks Guys
