Bluff catch or bluff with middle pair?

Blinds: $0.25/$0.50 (6 Players) UTG: $74.76
MP: $8.14
CO: $27.77
BN: $49.54 (Hero)
SB: $49.50
BB: $64.37
Preflop ($0.75) Hero is BN with 7 K
2 folds, CO calls $0.50, Hero raises to $2.50, SB calls $2.25, BB folds, CO folds
SB seems to be a TAGish reg from small sample size
Flop ($6.00) 7 Q 5
SB checks, Hero bets $3.50, SB calls $3.50
I'm guessing that the default play here is to check back with my middle pair and bluff catch 1-2 streets. However, when villain cold/calls from the sb I expect his range to be heavily weighted towards mid pocket pairs, something like 66-TT, that will have a hard time continuing on three streets. I block KQ, 77, and I have some equity with an overcard and backdoor hearts, so it occured to me that this might make a better 3 barrel bluff hand?

I feel like when we check back the flop, we tend to give value on the turn to medium pairs that bet to protect and then check the river. We also will get bluffed off the river by missed draws sometimes and this sucks too.

Now that villain has a lot of pair+draw hands, my plan is to barrel turn and any non 8 or 6? Too ambitious??
