What would you do here against an unknown reg? Could he be taking this line with a set since he expects us to slow down with overpairs on this turn? Could he fast play flop with AKhh, AQhh, KQhh. Do you give him all combos of AhK, AhQ, AKh, KhQ?

I call turn, I think he has a lot of draws.
I don't think we can fold here. He definitely could be taking this line with a set but could also be taking with AhKx, AxKh or maybe low-mid PP with a heart.
