How should I adjust?!

Hey! Please take your time to read this I think I have some quite interesting questions about adjusting.

So I have played 4k hands on 200bbs tables, often 200-400bbs deep against a sort of strong ego-maniac with the following stats: https://gyazo.com/5027ca3e6f6eaabc5e7fe1832e53d145

This guy will open 3-9bbs, 3b to 9-12 over my 2 minraise open because he feel like he can "RUN MY MINBET NIT NUBSTYLE OVER."
He will overbet random streets on random boards occasionally, most often for value i think but also as a bluff sometimes.

What preflop adjustments should I make to my range? I feel like I should be able to crush this guy easy peasy. However, I'm too weak in certain spots, so he kinda runs me over. He has played poker for about 10 years and I've only been playing for around 2 off and on.

I am up 6-12 BI's depending on which stake i count, we play 2 different stakes, but I still feel like im getting totally runned over with sick 200bbs stack swings. He doesnt care for shit about SPR or anything he will barrel to hell..

So the adjustments I have made is to only 3b for value: AA-99, AKs-ATs, KQs-KTs, QJs-QTs AKo-AJo, KQo, JTs. I dont want to 3b thinner because he only opens 50 ish % of buttons, but mby i should 3b wider?

Also i try to fold more pre oop ofc, since his opening range is strong and has a huge sizing. What about his 3bets? Should I really nit it up or defend something like TT-66, AJs-A2s, KQs-K6s, QJs-Q7s, JTs-J7s, AJo-A8o, KQo-K9o,QJo-Q9o, 65s,75s 86s, 97s, 78s, 89s, 98o, T9o? and then only 4b AA-JJ AKs AQs AKo AQo? This is what i have done thus far and i feel like he play perfect vs me in 4b pots alot of the time.
